How to read a harvest date (and why it matters)

Most produce in a regular supermarket has already spent days, sometimes weeks, in cold storage and transit before it reaches a shelf. Nutrient loss and flavour loss both start the moment something is picked.

We built our routes backwards from harvest, not the other way around — order cutoffs are set by when a farm can pick, not by our own convenience.

The harvest date on a product page is a promise, not decoration: it's the actual day that item left the ground or the tree.
